Preparation
  1. Preheat the oven to 325°F (163°C) and lightly grease a 9×13-inch baking pan.
  2. Toss the diced potatoes into the pan to form a level bed, ensuring even pieces for uniform cooking.
  3. Add the shredded cheddar, crumbled bacon, minced garlic, and chopped onion over the potatoes, sprinkling evenly.
  4. Dollop the mayonnaise across the top and fold gently until everything looks evenly coated and glossy.
Baking
  1. Slide the pan into the oven and bake uncovered for 1.5 hours. You’ll hear gentle bubbling and smell roasted potatoes.
  2. Check for fork-tender potatoes and golden, bubbly edges to know the dish is done. Let rest for 5–10 minutes before serving.

Notes

For a hearty meal, serve alongside ground beef and gravy over mashed potatoes. For extra flavor, stir in a teaspoon of smoked paprika or a handful of chopped green onions before baking.
