  • 1 lb lean ground beef
  • 1 cup nacho cheese sauce Mild cheese sauce keeps kids happy.
  • 1/2 cup sour cream
  • 1 can Rotel (diced tomatoes with green chilis) Swap for diced green chiles if desired.
  • 1 medium green bell pepper, chopped
  • 1 small onion, diced
  • 1 packet taco seasoning mix
  • 1 cup crushed Nacho Cheese Doritos
  • 4 large flour tortilla wraps Warm tortillas roll easier.
  • 1 cup shredded lettuce For serving.

Cooking
  1. Heat a skillet over medium-high until it’s hot and shimmering.
  2. Add ground beef and cook, breaking it up, until deeply browned and a steady sizzle is heard.
  3. Drain any excess fat; keep the pan slightly greasy for flavor.
  4. Add the diced onion and chopped green pepper; sauté about 4 minutes until softened.
  5. Stir in the taco seasoning with a splash of water; simmer for 1–2 minutes until the spice clings to the beef.
  6. In a separate bowl, whisk the nacho cheese sauce with the Rotel until smooth.
  7. Lay each tortilla flat and spread the cheese-Rotel mixture down the center.
  8. Add a scoop of beef mixture, a dollop of sour cream, and sprinkle with crushed Doritos.
  9. Fold the sides in and roll tightly; press gently to hold.
  10. Toast each wrap in a dry skillet over medium heat for 2–3 minutes per side until golden and crisp. Serve immediately over shredded lettuce.

Notes

Tip to save time: Brown the beef the night before and reheat. Avoid overstuffing the wraps.
