Preparation
- In a mixing bowl, beat the cream cheese until totally smooth and creamy.
- Add the powdered sugar, vanilla extract, and a pinch of salt. Beat again until fully combined.
- Stir in the graham cracker crumbs until the mixture holds together like a thick dough.
- Roll the mixture into 1-inch balls and place on a parchment-lined tray.
- Chill the tray in the fridge for 1 hour or until the bites are firm.
- Melt the white chocolate and colored candy melts in separate bowls according to package instructions.
Dipping and Decorating
- Dip each chilled bite into the melted white chocolate, allowing excess to drip off.
- Top each bite with festive sprinkles and drizzle with additional melted chocolate if desired.
- Return bites to the fridge to chill again until the chocolate is set, about 15–30 minutes.
Storage
- Store the cheesecake bites in the fridge until ready to serve. They keep well and taste even better after a few hours.
- For longer storage, freeze on a tray and transfer to a sealed bag for up to 1 month; thaw in the fridge overnight.
Notes
Tips: Use a small cookie scoop for uniform balls. If the mixture is too soft, add more graham crumbs. For a flavor twist, add orange zest or cinnamon.
