  • 8 oz cream cheese, softened room temperature for the creamiest texture.
  • 1 cup powdered sugar sifted if lumpy for smoother bites.
  • 1.5 cups graham cracker crumbs toasted a little for extra warmth.
  • 1 teaspoon vanilla extract pure vanilla brightens the filling.
  • 1 pinch salt balances the sweetness.
Coating and Decoration
  • 12 oz white chocolate or almond bark, melted use good quality for a smoother shell.

Method
 

Preparation
  1. In a mixing bowl, beat the cream cheese until totally smooth and creamy.
  2. Add the powdered sugar, vanilla extract, and a pinch of salt. Beat again until fully combined.
  3. Stir in the graham cracker crumbs until the mixture holds together like a thick dough.
  4. Roll the mixture into 1-inch balls and place on a parchment-lined tray.
  5. Chill the tray in the fridge for 1 hour or until the bites are firm.
  6. Melt the white chocolate and colored candy melts in separate bowls according to package instructions.
Dipping and Decorating
  1. Dip each chilled bite into the melted white chocolate, allowing excess to drip off.
  2. Top each bite with festive sprinkles and drizzle with additional melted chocolate if desired.
  3. Return bites to the fridge to chill again until the chocolate is set, about 15–30 minutes.
Storage
  1. Store the cheesecake bites in the fridge until ready to serve. They keep well and taste even better after a few hours.
  2. For longer storage, freeze on a tray and transfer to a sealed bag for up to 1 month; thaw in the fridge overnight.

Notes

Tips: Use a small cookie scoop for uniform balls. If the mixture is too soft, add more graham crumbs. For a flavor twist, add orange zest or cinnamon.
