Preparation
- In a medium-sized mixing bowl, mix the melted butter into the graham cracker crumbs until a sandy mixture forms.
- Press the crumb mixture evenly into the bottom of a 9-inch springform pan and set aside.
Filling
- In a large mixing bowl, whip the cream cheese using an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- Add the heavy cream and vanilla extract, and whip until the mixture is homogenous and the whipped cream is fully incorporated with stiff peaks.
- Mix in the granulated sugar and diced strawberries, ensuring the berries are evenly distributed throughout the mixture.
Assembly and Chilling
- Pour the cheesecake filling into the springform pan over the crust, and place in the freezer to chill for at least 4 hours, preferably overnight.
- Let the cheesecake sit out for 10-15 minutes before slicing and serving.
