Ingredients
  

For the crust
  • 1 cup Graham crackers crumbs Use a food processor to achieve fine crumbs.
  • 1/2 cup Salted butter, melted Adds richness and helps bind the crust together.
For the filling
  • 16 oz Cream cheese, at room temperature Ensure it's at room temperature for smooth mixing.
  • 1 cup Heavy whipping cream Whipped until stiff peaks form.
  • 3/4 cup Granulated sugar Balances the tartness of the strawberries.
  • 2 cup Diced strawberries Fresh berries are best for flavor and color.
  • 1 tbsp Vanilla extract Optional, enhances flavor.

Method
 

Preparation
  1. In a medium-sized mixing bowl, mix the melted butter into the graham cracker crumbs until a sandy mixture forms.
  2. Press the crumb mixture evenly into the bottom of a 9-inch springform pan and set aside.
Filling
  1. In a large mixing bowl, whip the cream cheese using an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  2. Add the heavy cream and vanilla extract, and whip until the mixture is homogenous and the whipped cream is fully incorporated with stiff peaks.
  3. Mix in the granulated sugar and diced strawberries, ensuring the berries are evenly distributed throughout the mixture.
Assembly and Chilling
  1. Pour the cheesecake filling into the springform pan over the crust, and place in the freezer to chill for at least 4 hours, preferably overnight.
  2. Let the cheesecake sit out for 10-15 minutes before slicing and serving.
