- In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined. Press this mixture into the bottom of a springform pan to create a firm crust.
- In a large mixing bowl, beat the cream cheese until smooth. Then add the powdered sugar and vanilla extract, mixing until fully combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to lighten it up.
- Incorporate the pureed strawberries into the cream mixture, folding gently until evenly combined.
- Pour the strawberry filling over the crust and smooth out the top with a spatula.
- Refrigerate the cheesecake for at least 4 hours or until it’s fully set.
- Before serving, top the cheesecake with fresh strawberries.
Notes
For best results, allow the cheesecake to chill overnight. Bring ingredients to room temperature before mixing for easier blending. Avoid overmixing the whipped cream.
