Preparation
- Preheat your oven to 375°F (190°C) and generously grease a muffin tin.
- In a saucepan over medium heat, melt the butter in the milk until it starts to bubble and gently boil. Remove from heat.
- Stir in the flour and a pinch of salt, mixing until it transforms into a smooth dough that pulls away from the sides of the pan.
- Let the mixture cool for about 5 minutes, then beat in the eggs one at a time, mixing thoroughly after each addition.
- If desired, stir in the optional tablespoon of sugar.
Baking
- Spoon the batter into the muffin cups, filling each about halfway.
- Bake for 30–35 minutes until puffed up and golden brown.
Notes
For a time-saving trick, prep the batter in advance and keep it in the fridge for a few hours before baking. If the puffs don't rise as expected, ensure your oven is fully preheated. For flavor variations, consider adding vanilla extract or lemon zest to the batter.
