  • 2/3 cup Minute Rice
  • 2 3/4 cups whole milk Use whole milk for the creamiest result.
  • 1/3 cup sugar
  • 1 tablespoon unsalted butter Use unsalted butter to control the salt.
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract For extra comfort, try a splash of real vanilla.
  • 1/4 teaspoon nutmeg
  • 1/2 cup raisins Soak in warm water for 10 minutes for plump bites.
For Serving
  • Cinnamon For sprinkling on top.

Method
 

Preparation
  1. Preheat your oven to 350°F and butter a 1-quart baking dish.
  2. In the dish, stir together the Minute Rice, milk, sugar, butter, salt, vanilla, nutmeg, and raisins until evenly distributed.
Baking
  1. Place the dish in the oven and bake for 1 hour.
  2. After 15 minutes, gently stir the pudding to enhance its texture.
  3. When the hour is up, stir once more and sprinkle cinnamon over the top.
  4. Let it stand for a few minutes to thicken before serving.

Notes

To reheat, warm gently and stir in a splash of milk. For a different twist, add a tablespoon of rum or bourbon after baking, or fold in toasted almonds and orange zest.
