- In a heatproof medium glass bowl, combine the sugar, cold water, egg whites, cream of tartar, and salt.
- Bring a pot of water to a gentle simmer.
Mixing and Heating
- Beat the mixture on low speed for about 30 seconds.
- Carefully, place the bowl over the simmering water, ensuring it doesn’t touch the surface.
- Turn the mixer to high speed and beat for seven minutes until the mixture grows glossy and fluffy.
Finishing Touches
- Remove from heat, add in the vanilla, and keep beating for one to two minutes until the frosting forms firm peaks.
- Use immediately, as the glossy finish sets quickly.
Notes
Store leftover frosting in an airtight container in the refrigerator for up to a week. To reheat, place the container in warm water and stir gently. For a twist, add a dash of almond extract instead of vanilla.
