Method
 

Preparation
  1. In a heatproof medium glass bowl, combine the sugar, cold water, egg whites, cream of tartar, and salt.
  2. Bring a pot of water to a gentle simmer.
Mixing and Heating
  1. Beat the mixture on low speed for about 30 seconds.
  2. Carefully, place the bowl over the simmering water, ensuring it doesn’t touch the surface.
  3. Turn the mixer to high speed and beat for seven minutes until the mixture grows glossy and fluffy.
Finishing Touches
  1. Remove from heat, add in the vanilla, and keep beating for one to two minutes until the frosting forms firm peaks.
  2. Use immediately, as the glossy finish sets quickly.

Notes

Store leftover frosting in an airtight container in the refrigerator for up to a week. To reheat, place the container in warm water and stir gently. For a twist, add a dash of almond extract instead of vanilla.
