  • 2 tablespoons honey or maple syrup A touch of sweetness; feel free to adjust to your taste.
  • 1 tablespoon soy sauce Adds depth and umami to the dish.
  • 1 tablespoon olive oil For that lovely sautéed flavor.
  • 3 cloves garlic, minced Because garlic makes everything better.
  • 1 teaspoon Dijon mustard A little tang that enhances the flavors.
  • 1 teaspoon dried thyme (or fresh sprigs) Herbs brighten the dish with their fragrance.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken with salt and pepper.
  3. In a large oven-safe skillet or baking dish, toss the halved potatoes with olive oil, salt, and pepper.
  4. Nestle the seasoned chicken right on top of the potatoes.
  5. In a bowl, whisk together the orange juice, honey, soy sauce, garlic, Dijon, and orange zest.
  6. Pour the mixture evenly over the chicken and potatoes.
  7. Scatter the cranberries around the dish and sprinkle everything with thyme.
Cooking
  1. Bake for 35–40 minutes, until the chicken is cooked through, and the potatoes are tender and golden.
  2. Spoon the finished sauce over the chicken and potatoes before serving.

Notes

You can prep your chicken and potatoes ahead of time for deeper flavor. If your chicken is dry, it might be overcooked. You can swap out orange juice for apple cider for a delightful twist.
