  • 8 oz spaghetti or pasta of choice
  • 2 cups vegetable or chicken broth Use low-sodium broth to control salt.
  • 1 cup milk Whole milk gives richest creaminess.
  • 4 cloves garlic, minced Fresh garlic = bigger flavor.
  • 1 cup Parmesan cheese, grated Grate Parmesan fresh for better melt.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Method
 

Cooking
  1. Heat olive oil in a large pan over medium heat; it should shimmer but not smoke.
  2. Add the minced garlic and sauté while stirring for about 45–60 seconds until fragrant, but don't let it brown.
  3. Pour in the broth and milk, then bring to a gentle boil; watch for small rolling bubbles at the edges.
  4. Add the pasta, spread it out, and stir to prevent sticking. Cook according to package time, stirring occasionally.
  5. When pasta is tender and most liquid is absorbed, reduce heat to low to allow sauce to coat and thicken.
  6. Stir in the Parmesan a handful at a time until it melts into a creamy sauce that coats the pasta.
  7. Taste and season with salt and pepper; sprinkle chopped parsley for color and serve immediately.

Notes

For a peppery twist, consider adding red pepper flakes or a squeeze of lemon. Can be served with a side salad or crusty bread.
