Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened Use unsalted so you can control the salt level.
For the filling
  • 3 large eggs
  • 1 cup corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves Toast them briefly for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour and powdered sugar. Cut in the softened unsalted butter until the mixture resembles coarse crumbs. Press the dough evenly into the baking dish.
  3. Bake the crust for 15 minutes or until lightly golden.
Filling
  1. In a bowl, whisk together the eggs, corn syrup, granulated sugar, light brown sugar, melted unsalted butter, and vanilla extract until smooth.
  2. Stir in the pecan halves and pour the mixture over the baked crust, spreading it evenly.
  3. Bake for an additional 30-35 minutes, until the edges are golden and the center is set but slightly jiggly.
Cooling and Serving
  1. Let the pan cool completely on a wire rack before cutting into bars.

Notes

For a different flavor twist, consider adding 1/4 teaspoon cinnamon or a tablespoon of bourbon to the filling. Store at room temperature for up to 2 days, or refrigerate for up to 5 days. Frozen bars can be kept for up to 2 months.
