Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Pound each chicken breast to 1.5cm (0.6 inches) thick for even cooking.
  3. In a small bowl, combine brown sugar, paprika, dried oregano, garlic powder, salt, and pepper.
  4. Line a baking tray with foil and parchment paper. Place the chicken upside down on the tray, drizzle with olive oil, and rub it in. Sprinkle with half the seasoning mixture.
  5. Flip the chicken breast over, drizzle with the remaining olive oil, rub it in, and sprinkle with the rest of the seasoning.
Cooking
  1. Transfer the tray to the oven and bake for 18 minutes or until the chicken is golden and reaches an internal temperature of 165°F (75°C).

Notes

For best results, use a meat thermometer to check for doneness. Let the chicken rest for 3-5 minutes before serving to redistribute juices.
