Preparation
- Preheat the oven to 425°F (220°C).
- Pound each chicken breast to 1.5cm (0.6 inches) thick for even cooking.
- In a small bowl, combine brown sugar, paprika, dried oregano, garlic powder, salt, and pepper.
- Line a baking tray with foil and parchment paper. Place the chicken upside down on the tray, drizzle with olive oil, and rub it in. Sprinkle with half the seasoning mixture.
- Flip the chicken breast over, drizzle with the remaining olive oil, rub it in, and sprinkle with the rest of the seasoning.
Cooking
- Transfer the tray to the oven and bake for 18 minutes or until the chicken is golden and reaches an internal temperature of 165°F (75°C).
Notes
For best results, use a meat thermometer to check for doneness. Let the chicken rest for 3-5 minutes before serving to redistribute juices.
