Ingredients
  

Potato Slices
  • 4 medium medium yellow potatoes, scrubbed (not peeled)
Seasoning and Topping
  • 3 tablespoons olive oil
  • ¼ teaspoon garlic powder Fresh garlic = bigger flavor.
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ½ teaspoon salt Adjust to taste.
  • 4 tablespoons shredded Parmesan cheese, divided Use the remaining Parmesan for topping.

Method
 

Preparation
  1. Preheat the oven to 450°F (232°C) and line a rimmed baking sheet with parchment paper.
  2. Slice the potatoes into ¼-inch thick rounds using a mandoline or sharp knife.
  3. In a large bowl, toss the potato slices with olive oil, garlic powder, onion powder, black pepper, dried parsley, salt, and 2 tablespoons of Parmesan.
  4. Arrange the slices on the baking sheet in a single layer, ensuring they don’t overlap.
Baking
  1. Bake for 20–25 minutes, flipping halfway through until golden and firm.
  2. Sprinkle the remaining Parmesan over the slices and bake for an additional 3 minutes until melted.
  3. Serve hot with your favorite dip.

Notes

If desired, add a pinch of smoked paprika for a bit of heat. Use a mandoline for quicker and more even slicing.
