Ingredients
  

For the Ribs
  • 4 pounds Pork ribs (baby back) I recommend using baby back ribs for their tenderness and flavor.
  • 1 cup Sweet alcoholic apple cider This adds a hint of sweetness; apple juice can be used as a substitute if needed.
  • 1 tablespoon Paprika Gives the ribs a delicious kick.
  • 1 tablespoon Garlic powder Part of the rub for the ribs.
  • 1 teaspoon Cayenne pepper For added heat.
  • 1 tablespoon Molasses Enhances the depth of flavor and gives the sauce a rich color.
  • 1 cup Tomato ketchup Key ingredient for the barbecue sauce.
For the Barbecue Sauce
  • 1/4 cup Brown sugar To sweeten the sauce.
  • 2 tablespoons Worcestershire sauce Adds complexity to the sauce.

Method
 

Preparation
  1. Combine paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, and black pepper in a bowl.
  2. Massage this mixture onto both sides of the ribs, and let them marinate for 20 minutes or overnight for best results.
Baking
  1. Preheat the oven to 160°C (320°F).
  2. Place ribs on a tray, pour apple cider underneath, and cover with foil.
  3. Bake for about 1 hour and 30 minutes or until the meat is tender.
  4. Increase temperature to 180°C (350°F), drizzle olive oil, and bake uncovered for another 15 minutes until the rub becomes crusty.
  5. Prepare the barbecue sauce by mixing tomato ketchup, brown sugar, Worcestershire sauce, molasses, and garlic powder.
  6. Slather the sauce on the ribs and return to the oven.
  7. Flip the ribs, coat again with barbecue sauce, and bake for an additional 5-10 minutes, repeating until you achieve a thick glaze.
Serving
  1. Cut into portions and drizzle with any extra barbecue sauce before serving.

Notes

Don’t overcrowd the tray for even cooking results. Use a meat thermometer for optimal doneness (approximately 75°C or 165°F) and let the ribs rest for at least 10 minutes before serving.
