  • 2 pieces slightly overripe bananas Sweeter and easier to caramelize
  • 2 tablespoons sugar (or substitute) Brown sugar adds depth
  • 1 teaspoon cinnamon Use true cinnamon for warmth
  • ΒΌ teaspoon nutmeg (optional) Adds a cozy, nutty note

Method
 

Preparation
  1. Peel the bananas and slice them into β…“-inch thick rounds. Lay them on a plate.
  2. Stir the sugar, cinnamon, and optional nutmeg in a small bowl until blended and fragrant.
Cooking
  1. Warm a large skillet over medium-low and lightly spray it with nonstick spray.
  2. Add the banana slices to the pan in a single layer.
  3. Sprinkle half of the cinnamon-sugar mix over the bananas and cook for 2–3 minutes until the edges look glossy and start to turn golden.
  4. Flip each slice gently with a spatula, sprinkle the remaining mixture on top, and cook another 2–3 minutes until the bananas are soft and lightly caramelized.
  5. Transfer to a plate and serve immediately while warm.

Notes

Slice bananas ahead and refrigerate for up to a day; cook right before serving. Avoid using high heat to prevent burning sugar.
