Preparation
- Preheat the oven to 350°F (175°C) and place a 9x13-inch baking dish inside.
- In a saucepan over medium heat, combine sliced peaches, both sugars, lemon juice, vanilla extract, cinnamon, nutmeg, and cornstarch, stirring gently for 5-7 minutes until thickened.
Batter Preparation
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk and whisk until smooth and creamy.
Assembly and Baking
- Carefully remove the hot baking dish from the oven and pour melted butter into it.
- Pour the batter evenly over the butter; do not stir.
- Spoon the peach mixture over the batter without stirring.
- Bake for 40-50 minutes until golden brown and a toothpick comes out clean.
Serving
- Let rest for 10-15 minutes. Serve warm, ideally with vanilla ice cream or whipped cream.
