Peach Filling
  • 6 cups sliced peaches (fresh, frozen, or drained canned) Fresh peaches bring a burst of flavor, but frozen or canned work too.
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch (or flour for thickening)
Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (whole or 2%)
  • 1/2 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and place a 9x13-inch baking dish inside.
  2. In a saucepan over medium heat, combine sliced peaches, both sugars, lemon juice, vanilla extract, cinnamon, nutmeg, and cornstarch, stirring gently for 5-7 minutes until thickened.
Batter Preparation
  1. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk and whisk until smooth and creamy.
Assembly and Baking
  1. Carefully remove the hot baking dish from the oven and pour melted butter into it.
  2. Pour the batter evenly over the butter; do not stir.
  3. Spoon the peach mixture over the batter without stirring.
  4. Bake for 40-50 minutes until golden brown and a toothpick comes out clean.
Serving
  1. Let rest for 10-15 minutes. Serve warm, ideally with vanilla ice cream or whipped cream.

Notes

Store leftovers in the fridge for up to 3 days; reheat in the oven or microwave as needed. Consider adding a pinch of ginger or nutmeg for flavor variations.
