Preparation
- In a medium saucepan over low heat, melt together the butter and peanut butter. Stir constantly until it becomes a smooth blend.
- Remove from heat and stir in the vanilla extract.
- Gradually add the powdered sugar, mixing until thick and smooth.
- Spread the mixture evenly into a lightly greased 8×8 inch or 9×13 inch pan.
- Place the pan in the fridge to firm up while making the chocolate layer.
Chocolate Layer
- In a microwave-safe bowl, melt the chocolate chips with the 2 tablespoons peanut butter in 30-second intervals, stirring after each until smooth.
- Pour the chocolate mixture over the peanut butter base and spread it out evenly.
Chilling
- Refrigerate for at least 2 hours, or until firm.
- Once set, cut into small squares and serve.
Notes
For a time-saving trick, use an electric mixer on low speed to blend the powdered sugar. If the chocolate layer is too thick, microwave it for a few seconds to soften. Consider garnishing with a sprinkle of sea salt or serving with a side of honey.
