Preparation
- Line an 8x8 pan with parchment paper or lightly grease it to prevent sticking.
- Place a medium saucepan over medium heat and add the sugar and milk. Stir gently until the sugar dissolves.
- Bring the mixture to a boil and boil for about 3 minutes, stirring often to prevent scorching.
- Remove the pan from the heat and quickly stir in the peanut butter and vanilla until smooth and glossy.
- Pour the fudge into the prepared pan and smooth the top with a spatula.
- Let the fudge cool until fully set, then cut into squares and serve at room temperature.
Notes
For richer fudge, swap a couple tablespoons of milk for butter. To add a chocolate-peanut twist, see chocolate fudge variations. Store in an airtight container at room temperature for up to a week or refrigerate for longer shelf life.
