Preparation
  1. Line an 8x8 pan with parchment paper or lightly grease it to prevent sticking.
  2. Place a medium saucepan over medium heat and add the sugar and milk. Stir gently until the sugar dissolves.
  3. Bring the mixture to a boil and boil for about 3 minutes, stirring often to prevent scorching.
  4. Remove the pan from the heat and quickly stir in the peanut butter and vanilla until smooth and glossy.
  5. Pour the fudge into the prepared pan and smooth the top with a spatula.
  6. Let the fudge cool until fully set, then cut into squares and serve at room temperature.

Notes

For richer fudge, swap a couple tablespoons of milk for butter. To add a chocolate-peanut twist, see chocolate fudge variations. Store in an airtight container at room temperature for up to a week or refrigerate for longer shelf life.
