Ingredients
  

For the Bars
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon vanilla extract
  • 4 eggs
  • 1 cup vegetable oil
  • 15 ounce can pumpkin puree
  • Cooking spray for coat the pan
For the Frosting
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Sprinkles for decoration optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 10x15 inch pan with parchment paper and cooking spray.
  2. In a large bowl, combine flour, granulated sugar, brown sugar, pumpkin pie spice, salt, baking soda, and baking powder. Stir until well-mixed.
  3. Add vanilla extract, eggs, vegetable oil, and pumpkin puree. Stir until just combined.
  4. Spread the batter evenly into the prepared pan.
Baking
  1. Bake for about 25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  2. Let the bars cool completely in the pan.
Frosting
  1. In a bowl, mix softened butter and cream cheese until light and fluffy, about 2 to 3 minutes.
  2. Gradually add powdered sugar, mixing on low speed, then stir in vanilla extract.
  3. Adjust consistency with a splash of milk if needed.
  4. Spread the frosting over the cooled Pumpkin Bars and top with sprinkles.

Notes

For a time-saving trick, mix dry ingredients ahead of time. To avoid dry bars, do not overbake them. Consider adding nuts or chocolate chips for extra flavor.
