Preparation
- Preheat your oven to 350°F (175°C) and line a 10x15 inch pan with parchment paper and cooking spray.
- In a large bowl, combine flour, granulated sugar, brown sugar, pumpkin pie spice, salt, baking soda, and baking powder. Stir until well-mixed.
- Add vanilla extract, eggs, vegetable oil, and pumpkin puree. Stir until just combined.
- Spread the batter evenly into the prepared pan.
Baking
- Bake for about 25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool completely in the pan.
Frosting
- In a bowl, mix softened butter and cream cheese until light and fluffy, about 2 to 3 minutes.
- Gradually add powdered sugar, mixing on low speed, then stir in vanilla extract.
- Adjust consistency with a splash of milk if needed.
- Spread the frosting over the cooled Pumpkin Bars and top with sprinkles.
Notes
For a time-saving trick, mix dry ingredients ahead of time. To avoid dry bars, do not overbake them. Consider adding nuts or chocolate chips for extra flavor.
