Pumpkin Chocolate Chip Bread

Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour (plus more for coating chocolate chips) Use additional flour for coating to prevent chocolate chips from sinking.
  • 1 teaspoon pumpkin pie spice The essence of fall in a sprinkle!
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup granulated sugar
Wet Ingredients
  • 1 cup pumpkin puree The heart of this bread.
  • 3/4 cup vegetable oil To keep it oh-so-moist.
  • 2 eggs
  • 1/2 teaspoon vanilla extract For added warmth.
Chocolate Chips
  • 1 1/4 cups semisweet chocolate chips, divided Use 1 cup in the batter, sprinkle 1/4 cup on top.
Other
  • Cooking spray Cooking spray For greasing the loaf pan.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Spray an 8" x 4" loaf pan with cooking spray and line the bottom with parchment paper.
  3. In a large bowl, combine the flour, pumpkin pie spice, salt, and baking soda. Whisk together.
  4. Add in the sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Stir until just combined; lumps are okay.
  5. Toss 1 cup of chocolate chips with 1 tablespoon of flour. Gently fold floured chocolate chips into the batter.
  6. Pour the batter into the prepared pan and sprinkle the remaining 1/4 cup of chocolate chips on top.
Baking
  1. Bake for 55-65 minutes, or until a toothpick comes out clean from the center.
Cooling
  1. Let the bread cool in the pan for about 10 minutes. Run a thin knife around the edges to release it.
  2. Cool completely on a cutting board before slicing.
Serving
  1. Serve warm with butter or cinnamon sugar, and enjoy with coffee or tea.

Notes

Store leftovers tightly wrapped or in an airtight container. For longer storage, freeze slices and reheat in the microwave or toaster. Creative variation ideas include adding nuts or dried cranberries.
