  • 1/2 cup bread crumbs These give the patties a lovely crust.
  • 1/4 cup chopped onion For a touch of sweetness.
  • 1/4 cup mayonnaise This adds creaminess and moisture.
  • 1 piece egg Helps bind everything together.
  • 1 teaspoon lemon juice Brightens up the flavors beautifully.
  • to taste salt and pepper Seasoning is key!
  • as needed oil for frying Use canola or olive oil for a nice crisp.

Method
 

Preparation
  1. In a bowl, combine the drained and flaked salmon, bread crumbs, chopped onion, mayonnaise, egg, lemon juice, salt, and pepper.
Shaping the Patties
  1. Take a handful of the mixture and shape it into patties, about the size of a hockey puck.
Frying
  1. Heat a generous splash of oil in a skillet over medium heat.
  2. Once the oil shimmers, place the patties gently into the pan and fry each side for about 4-5 minutes until golden brown and crispy.

Notes

You can mix the salmon mixture a day ahead and keep it in the fridge. If the mixture feels too wet to hold together, add a bit more bread crumbs. Add a teaspoon of dill or a dash of hot sauce for extra flavor.
