Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Grease a 9x13" baking dish.
  3. In the baking dish, combine the uncooked rice, chicken broth, ranch seasoning, and sour cream. Mix until creamy.
  4. Place the chicken breasts on top and sprinkle with pepper if desired.
  5. Cover with foil and bake in the oven for 55 minutes.
  6. Check if the rice is done; if it has a slight crunch, re-seal and bake for an additional 5-10 minutes.
  7. Once it's done, stir the rice gently before serving. You can either plate the chicken whole or chop it up.

Notes

You can prep the ingredients in advance; the casserole stores well in the fridge for up to 3-4 days and freezes beautifully. For leftover ideas, toss with lettuce and dressing for a wrap.
