Preparation
- Preheat the oven to 350°F.
- Grease a 9x13" baking dish.
- In the baking dish, combine the uncooked rice, chicken broth, ranch seasoning, and sour cream. Mix until creamy.
- Place the chicken breasts on top and sprinkle with pepper if desired.
- Cover with foil and bake in the oven for 55 minutes.
- Check if the rice is done; if it has a slight crunch, re-seal and bake for an additional 5-10 minutes.
- Once it's done, stir the rice gently before serving. You can either plate the chicken whole or chop it up.
Notes
You can prep the ingredients in advance; the casserole stores well in the fridge for up to 3-4 days and freezes beautifully. For leftover ideas, toss with lettuce and dressing for a wrap.
