Ingredients

  • 1 piece banana, small to medium, mashed Use ripe bananas for sweetness.
  • 1 piece egg
  • 2 tablespoons brown sugar
  • 2 tablespoons oil (light olive oil, canola, coconut, or melted butter)
  • 1/4 cup milk (any type, including non-dairy)
  • 3/4 cup all-purpose flour (or a mixture of flours)
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1 pinch cinnamon or nutmeg (optional) Optional for added flavor.
  • to taste optional extras (raspberries, blueberries, chocolate chips, coconut, nuts, 1/2 teaspoon vanilla) Customize as desired.

Method
 

Preparation
  1. Line a small ovenproof baking pan with baking paper and spray it with oil.
  2. Preheat your air fryer or oven to 320°F (160°C).
  3. In a bowl, whisk the egg into the mashed banana, and then mix in the brown sugar, oil, and milk.
  4. Add the flour, baking soda, and salt; mix until just combined. If desired, fold in any optional mix-ins.
Baking
  1. Pour the batter into the prepared pan and bake in the air fryer for 30–35 minutes or in the oven for 25 minutes, until a skewer inserted into the center comes out clean.
  2. Let it cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

Notes
