  • 2 pounds large carrots, peeled and cut into 2-inch pieces Use large carrots for even roasting.
  • 1/2 cup butter Unsalted butter is recommended.
  • 3 tablespoons honey Use quality honey for richer sweetness.
  • 2 cloves garlic, chopped Fresh garlic adds bigger flavor.
  • Salt and pepper, to taste Season as per preference.
  • Parsley, chopped for garnish For garnishing.

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan over medium-high heat, melt the butter. Watch closely for it to foam and turn golden brown, releasing a nutty aroma.
  3. Remove from heat and stir in the honey and chopped garlic, creating a shiny sauce.
  4. Peel and cut the carrots into 2-inch pieces, tossing them in the honey-garlic butter until well coated.
Cooking
  1. Spread the carrots on a baking sheet in a single layer. Season with salt and pepper, cover with foil, and bake for 10 minutes.
  2. After 10 minutes, remove the foil and continue roasting for another 5–10 minutes until the carrots are tender with caramelized edges.
  3. Transfer to a serving dish and sprinkle with chopped parsley. Serve warm.

Notes

For faster caramelization, cut carrots uniformly and roast on a hot baking sheet. If garlic browns too much in the sauce, lower the heat and stir frequently to avoid bitterness. You can add a pinch of smoked paprika or thyme for added flavor.
