  • 1 pound fresh green beans
  • 2 tablespoons olive oil Use extra virgin for flavor
  • 1/2 cup grated Parmesan cheese Freshly grated tastes best; pre-grated works in a pinch
  • to taste Salt and pepper
  • 1 teaspoon garlic powder Optional; fresh garlic gives an extra flavor boost
  • 1 teaspoon onion powder Optional; adds gentle sweetness

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Trim the ends of the green beans and put them in a big mixing bowl.
  3. Drizzle the olive oil over the beans, then toss them so every pod glistens.
  4. Add salt, pepper, garlic powder, and onion powder if using, and toss again.
  5. Spread the beans on a baking sheet in a single layer.
  6. Sprinkle the grated Parmesan cheese over the top.
Cooking
  1. Roast for 15–20 minutes, watching for slightly browned edges.
  2. Serve warm as a side dish.

Notes

If you like a little heat, add a pinch of red pepper flakes before roasting. You can also swap olive oil for melted butter.
