Ingredients

Main Ingredients
  • 1 pound ground breakfast sausage The star of the show that adds so much flavor!
  • 1 cup Cheddar Cheese, shredded The more cheese, the better!
  • 4 large eggs These bring everything together.
  • 1 cup Bisquick Baking Mix A must-have for light and fluffy muffins!

Method

Preparation
  1. In a skillet over medium heat, add your ground sausage and brown it until it's nice and brown. Drain any excess fat.
  2. While the sausage is cooking, preheat your oven to 350 degrees Fahrenheit.
  3. In a large bowl, combine the eggs, shredded Cheddar cheese, and Bisquick mix. Whisk until smooth.
  4. Gently fold in the cooked sausage into the egg and cheese mixture.
  5. Grease a muffin pan with non-stick spray or butter and fill each cup about three-quarters full with the sausage mixture.
Baking
  1. Place the muffin pan in the oven and bake for 18 to 20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  2. Let them cool for a few minutes before serving.
Serving
  1. Enjoy these Sausage Muffins warm, perhaps with honey or jam.

Notes

Tips include cooking the sausage the night before for quick prep and avoiding overmixing the batter to prevent sinking muffins.
