  • 1 wheel Brie cheese (8 oz)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Fresh garlic gives it that extra flavor boost!
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon honey optional; a touch of sweetness adds a lovely contrast.
  • Fresh parsley, chopped, for garnish
  • Crackers or baguette slices, for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Place the Brie wheel onto a baking dish or a parchment-lined baking sheet.
  3. Trim the rind lightly from the edges if desired.
Mixing the Herb Blend
  1. In a small bowl, stir together the olive oil, minced garlic, thyme, rosemary, and a pinch of salt and black pepper.
Assembly
  1. Pour the garlic and herb mixture over the Brie and spread it evenly.
Baking
  1. Transfer the assembled Brie to the oven and bake for 15–20 minutes until warmed through.
Finishing
  1. Drizzle honey over the top and sprinkle fresh parsley before serving.
  2. Serve warm with crackers or baguette slices.

Notes

Prepare garlic and herbs ahead of time to save on prep. If the Brie is too cold, let it sit at room temperature for 30 minutes before baking. For a twist, add crushed red pepper or walnuts.
