  • 1 can 1 can (14.75 oz) of salmon, drained and flaked Wild salmon adds an incredible flavor boost!
  • 1/2 cup 1/2 cup breadcrumbs Use panko for extra crunch!
  • 1/4 cup 1/4 cup green onions, finely chopped Scallions work wonderfully, too.
  • 1/4 cup 1/4 cup mayonnaise Homemade mayo takes this to the next level!
  • 1 large 1 egg, beaten This helps bind everything together nicely.
  • 1 teaspoon 1 teaspoon Dijon mustard A hint of mustard adds depth to the flavor.
  • 1 teaspoon 1 teaspoon lemon juice Freshly squeezed is always best!
  • Salt and pepper to taste
  • Oil for frying

Method
 

Preparation
  1. In a large bowl, combine the flaked salmon, breadcrumbs, green onions, mayonnaise, beaten egg, Dijon mustard, lemon juice, and a sprinkle of salt and pepper. Stir until everything is well blended, and let the aromas wash over you.
  2. With your hands, shape the mixture into patties.
Cooking
  1. Pour some oil into a skillet and set it over medium heat.
  2. Place the patties gently in the hot oil. Fry for about 3-4 minutes on each side until they turn that perfect golden brown.
  3. Remove the patties from the skillet and let them rest on paper towels to absorb any excess oil.
Serving
  1. Serve warm. Enjoy these little nuggets of joy best fresh, warm, and right out of the pan.

Notes

If you're pressed for time, mix the ingredients in advance and refrigerate overnight. If your patties are falling apart, try adding a touch more mayo or breadcrumbs for that perfect hold. Get creative by adding finely chopped bell peppers or herbs like dill for an extra zing.
