Ingredients
  

For the pie filling
  • 4 cups fresh strawberries, hulled and halved Fresh strawberries for the best flavor
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch Cornstarch thickens the filling perfectly
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon butter Room temperature butter blends smoothly
For the crust
  • 1 prepared baked pie crust Use a pre-made pie crust to cut down on prep time.

Preparation
  1. Preheat your oven to 350°F (175°C). Bake the pie crust until golden and let it cool completely.
Cooking
  1. In a medium saucepan, combine the sugar, cornstarch, and salt. Stir until evenly mixed.
  2. Pour in the water and lemon juice, mixing everything together.
  3. Place the saucepan over medium heat. Stir constantly until the mixture thickens and bubbles.
  4. Once thickened, remove the pan from heat. Stir in the butter until melted and combined. Let it cool slightly.
  5. Gently place the halved strawberries into the cooled pie crust. Pour the syrup evenly over the strawberries.
  6. Cover the pie and chill it in the refrigerator for at least 3 hours, or until set.

Notes

Avoid overcooking the filling; it should thicken but not burn. Add a pinch of vanilla extract for an extra flavor boost.
