Shrimp Scampi

Ingredients
  

Marinade
  • 1.25 pounds 16/20 count shrimp, deveined, shelled Optional to shell the shrimp
  • 0.5 tablespoon olive oil
  • 0.5 teaspoon kosher salt Diamond Crystal, or to taste
  • 3 cloves garlic, finely grated Fresh garlic gives it that extra flavor boost
Cooking Ingredients
  • 1.5 tablespoons olive oil
  • 4.5 tablespoons salted butter, divided Use unsalted butter if you want to control the salt
  • 1/3 cup shallots, finely chopped
  • 1/4 cup garlic, finely chopped
  • 2/3 cup dry white wine (e.g., Sauvignon Blanc)
  • 1/4 teaspoon black pepper or to taste
  • 0.5 teaspoon red chili flakes (adjust to your spice level)
  • 0.5 lemon zested
  • 2 tablespoons lemon juice
  • 1 tablespoon flat leaf parsley, finely chopped

Method
 

Marinate the Shrimp
  1. In a medium bowl, add the shrimp, grated garlic, kosher salt, and olive oil. Mix everything together gently. Let it marinate for about 25-30 minutes.
Cook the Shrimp
  1. Once the shrimp has marinated, add just 1/2 tablespoon olive oil to a medium skillet over medium-high heat.
  2. Add the shrimp to the skillet and cook them for about a minute on each side until they turn pink.
  3. Transfer them to a bowl and cover with foil to keep them warm.
Sauté the Aromatics
  1. In the same skillet, add the remaining olive oil and 2 and 1/2 tablespoons of butter.
  2. Once the butter melts, toss in the shallots and chopped garlic. Sauté for about 3-4 minutes, stirring gently to avoid browning the garlic too much.
Make the Sauce
  1. Stir in the red chili flakes and pour in the wine. Bring the sauce to a soft boil, and let it simmer for about 3-4 minutes until it reduces slightly.
Return the Shrimp
  1. Add the cooked shrimp back to the skillet and cook for another 2 minutes.
  2. Add the remaining 2 tablespoons of butter, along with the parsley, lemon zest, and lemon juice, mixing well to coat everything evenly.
Serve Immediately
  1. Plate your Shrimp Scampi with a side of crusty bread or rice to soak up all that delicious sauce.

Notes

Prep and marinate the shrimp a few hours ahead of time to save time at dinner. If you overcook your shrimp, a splash of lemon juice can help brighten the flavor.
