Ingredients
  

Dough Ingredients
  • 4 1/2 cups all-purpose flour plus extra for dusting Extra flour for dusting the surface.
  • 2 teaspoons yeast
  • 3 tablespoons sugar
  • 1 1/4 cups warm milk Make sure it's warm enough to activate the yeast but not too hot.
  • 1/4 cup olive oil Adds a lovely richness.
  • 1 whole egg For richness.
  • 1 egg yolk 1 egg yolk For extra fluffiness.
  • 1/2 teaspoon salt
Egg Wash and Topping
  • 1 egg white plus 2 tablespoons water For the egg wash.
  • 2 tablespoons melted butter For brushing after baking.

Method
 

Preparation
  1. In a large bowl, stir together the yeast and sugar. Pour in the warm milk and let it activate for about 5 minutes.
  2. Add the olive oil, salt, and the whole egg plus the egg yolk. Mix well using a whisk or wooden spoon.
  3. Gradually add flour, one cup at a time, mixing until a soft dough forms.
  4. Knead the dough for 5-7 minutes on a lightly floured surface until smooth and elastic.
  5. Place the dough in a greased bowl, cover with plastic wrap, and let it rise for about an hour, until doubled in size.
Shaping and Final Rise
  1. Once risen, punch down the dough to release air and divide into 24 pieces, rolling each into a ball.
  2. Arrange the rolled balls in a baking pan, close together, and let them rise for another 30 minutes.
Baking
  1. Preheat your oven to 350°F. Brush the tops of the dough balls with the egg wash.
  2. Bake for 20-25 minutes, until golden and puffed.
  3. Brush with melted butter as soon as they come out of the oven.

Notes

To save time, use a stand mixer with a dough hook for kneading. Try adding garlic powder or fresh herbs for extra flavor.
