Preparation
- In a large bowl, stir together the yeast and sugar. Pour in the warm milk and let it activate for about 5 minutes.
- Add the olive oil, salt, and the whole egg plus the egg yolk. Mix well using a whisk or wooden spoon.
- Gradually add flour, one cup at a time, mixing until a soft dough forms.
- Knead the dough for 5-7 minutes on a lightly floured surface until smooth and elastic.
- Place the dough in a greased bowl, cover with plastic wrap, and let it rise for about an hour, until doubled in size.
Shaping and Final Rise
- Once risen, punch down the dough to release air and divide into 24 pieces, rolling each into a ball.
- Arrange the rolled balls in a baking pan, close together, and let them rise for another 30 minutes.
Baking
- Preheat your oven to 350°F. Brush the tops of the dough balls with the egg wash.
- Bake for 20-25 minutes, until golden and puffed.
- Brush with melted butter as soon as they come out of the oven.
Notes
To save time, use a stand mixer with a dough hook for kneading. Try adding garlic powder or fresh herbs for extra flavor.
