  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp shortening or softened butter Use unsalted butter to control salt.
  • 3/4 cup warm water Warm, not hot; helps the dough come together smoothly.
  • Oil for frying A neutral oil like vegetable or canola works best.
Serving Ingredients
  • Honey or powdered sugar For serving.

Preparation
  1. In a bowl, whisk together the flour, baking powder, and salt.
  2. Cut in the shortening or butter with a fork or pastry cutter until the mixture looks sandy.
  3. Add the warm water gradually while stirring, then knead until a soft dough forms.
  4. Cover and let rest for 20 minutes.
Cooking
  1. Meanwhile, heat your oil to 375°F (190°C).
  2. Roll the dough out to about 1/4-inch thick and cut into squares or triangles.
  3. Fry a few pieces at a time, flipping once, until they puff and turn golden on both sides.
  4. Drain on paper towels and serve warm with honey or powdered sugar.

Notes

Time-saver: Preheat your oil while the dough rests. If sopapillas don't puff, check oil temperature. For a savory twist, brush with melted butter and sprinkle with cinnamon sugar or sea salt.
