  • 4 cups sweet potatoes, peeled and cubed Look for firm specimens with smooth skin.
  • 1/2 cup pure maple syrup For rich, caramel-like sweetness.
  • 1/4 cup brown sugar Light or dark brown sugar both work.
  • 1/2 cup raisins Provides a lovely chewy texture.
  • 1 teaspoon cinnamon Optional warm spices include nutmeg.
  • 1/4 cup chopped pecans Can be toasted for additional flavor.
  • 2 tablespoons butter Or use a vegan alternative.
  • 1/4 teaspoon salt To balance out sweetness.
  • 1 cup marshmallows Optional topping for gooey sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then add them to a pot of boiling water.
  3. Boil until fork-tender, about 15-20 minutes.
  4. Drain the sweet potatoes and place them in a large mixing bowl.
  5. Mash well, then stir in maple syrup, brown sugar, raisins, and spices.
  6. Spread the mixture into a greased baking dish.
  7. In a separate bowl, combine chopped pecans with melted butter and sprinkle over the sweet potato mixture.
  8. If desired, top with marshmallows.
Baking
  1. Bake for 30-35 minutes until heated through and tops are golden and bubbly.

  1. Serve warm to enjoy the comforting flavors.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. You can freeze the casserole before baking. Try adding a splash of orange juice for a citrusy kick.
