  • 2 cups sushi rice (uncooked) Use high-quality rice for the best texture.

  • 2 tablespoons sugar Helps balance the acidity.
  • 1 teaspoon salt Enhances all the flavors.
For the Salmon Mixture
  • 1 lb fresh salmon fillet (skinless and diced) Fresh is best for that melt-in-your-mouth experience.
  • 1/2 cup mayonnaise Creamy goodness that binds the flavors.
  • 2 tablespoons Sriracha sauce Adjust depending on your heat preference.
  • 1 teaspoon sesame oil Infuses a rich, nutty flavor.
  • 1/2 cup green onions (chopped) Adds a fresh crunch.
For Garnish
  • 1 sheet nori (cut into small strips) A lovely oceanic touch.
  • to taste tobiko (optional for garnish) For that pop of flavor and color!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the sushi rice according to the package instructions until fluffy and slightly sticky.
  3. Mix the vinegar dressing by combining rice vinegar, sugar, and salt until dissolved. Fluff the cooked rice and fold in the vinegar mixture.
  4. Spread the rice evenly at the bottom of a baking dish and let it cool slightly.
  5. Prepare the salmon mixture by mixing diced salmon, mayonnaise, Sriracha sauce, sesame oil, and green onions in a bowl.
Baking
  1. Spread the salmon mixture over the rice in the baking dish.
  2. Bake in the preheated oven for about 25-30 minutes until the salmon is cooked through and golden.
  3. Cool for a few minutes and garnish with extra green onions, nori strips, and tobiko if using.
  4. Serve warm and enjoy!

Notes

Tips: Use leftover rice for a quicker prep. If the salmon looks raw after baking, return it to the oven for a few minutes. You can substitute salmon with shrimp or crab for a variation.
