Fresh Ingredients
  • 1 lb fresh spinach or 2 packages frozen spinach, thawed and well-drained
  • 2 tablespoons butter unsalted for better control over salt
  • 1 tablespoon olive oil
  • 1 small onion or shallot, finely minced
  • 2 cloves garlic, minced fresh is preferred for bigger flavor
  • 3 tablespoons cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 teaspoon nutmeg
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare your baking dish.
  2. Heat the olive oil and butter in a large skillet over medium heat until the butter melts and begins to foam.
  3. Add the minced onion (or shallot) and garlic; cook until they soften and smell fragrant, about 3–4 minutes.
  4. Stir in the fresh spinach (or well-drained thawed spinach) and cook until the leaves are fully wilted and excess moisture evaporates.
Combining
  1. Whisk together the cream cheese, heavy cream, nutmeg, salt, and black pepper in a bowl until smooth.
  2. Combine the cream mixture with the warm spinach in the skillet, stirring until evenly coated.
  3. Transfer the mixture to the baking dish and sprinkle shredded mozzarella and grated Parmesan over the top.
Baking
  1. Bake for 20–25 minutes, or until the cheese is bubbly and the edges turn lightly golden.
  2. Let rest a few minutes before serving; the top will set and the sauce will thicken.

Notes

For a quick time-saver, use frozen spinach and press firmly to remove water. You can add red pepper flakes or Dijon mustard for extra flavor.
