Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Use a gluten-free blend if desired.
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 3/4 cup granulated sugar Brown sugar can be used for a richer flavor.
  • 1/2 cup milk Substitute with almond or oat milk if desired.
  • 1/2 cup neutral oil Vegetable or canola oil is recommended.
  • 1 large egg
  • 1 teaspoon vanilla or almond extract Choose based on your preference.
Strawberries
  • 2 cups fresh strawberries, diced Use ripe, hulled strawberries for the best results.
  • 2 tablespoons flour For coating strawberries to prevent sinking.
Glaze
  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1/3 cup finely diced strawberries
  • 1/2 teaspoon vanilla or almond extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. In a large bowl, whisk together the sugar, milk, oil, egg, and extract until smooth.
  3. In another bowl, combine the flour, baking powder, and salt, then add to the wet ingredients, stirring gently until just combined.
  4. Toss the diced strawberries with the flour and fold them gently into the batter.
Baking
  1. Pour the batter into the prepared pan and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack.
Glazing
  1. Prepare the glaze by whisking together the powdered sugar, melted butter, diced strawberries, and extract. Add cream or milk for desired consistency.
  2. Drizzle the glaze over the cooled bread.

Notes

For best results, avoid overmixing the batter to prevent a dense texture. Store leftovers in an airtight container in the fridge for up to 5 days.
