Ingredients
  

For the salad
  • 1 package 1 (3 oz) package strawberry gelatin pure strawberry flavor
  • 1 cup 1 cup boiling water pour carefully
  • 1/2 cup 1/2 cup cold water to cool the mix
  • 1 container 1 (8 oz) container whipped topping like Cool Whip, thawed, light texture
  • 1 can 1 (16 oz) can crushed pineapple, drained drain well for best set
  • 1 1/2 cups 1 1/2 cups mini marshmallows classic texture contrast
  • 1 cup 1 cup fresh strawberries, chopped ripe, sweet berries
  • 1/2 cup 1/2 cup sour cream adds gentle tang

Method
 

Preparation
  1. Dissolve the strawberry gelatin in 1 cup boiling water. Stir until powder disappears and the liquid looks glossy.
  2. Stir in 1/2 cup cold water and let the mixture cool to room temperature, about 20–30 minutes.
  3. Fold the whipped topping into the cooled gelatin using a spatula until the color is even and the texture is smooth.
  4. Drain the crushed pineapple very well; a minute in a fine sieve helps.
  5. Add the pineapple, marshmallows, chopped strawberries, and sour cream to the bowl. Stir gently to combine.
  6. Cover the bowl and refrigerate for at least 2 hours, until set and slightly firm to the touch. Serve chilled.

Notes

Chill the mixing bowl and spatula beforehand to keep the whipped topping airy. Wait until the gelatin is at room temperature to avoid melting the topping. Stir in a splash of vanilla extract for warmth if desired.
