Ingredients

For the crust
  • 2 cups sugar cookie dough Store-bought works, but homemade is always better!
For the filling
  • 1 cup cream cheese, softened Brings that creamy texture we love.
  • 1/2 cup sugar For that perfect sweetness.
  • 1 teaspoon vanilla extract A must-have for a warm flavor.
  • 2 pieces eggs Bind everything together beautifully.
  • 1/4 cup sour cream Adds richness and keeps it moist.
  • 1/4 cup all-purpose flour Just enough to help set the cheesecake.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Press 1 1/2 cups of sugar cookie dough firmly into the bottom of a springform pan.
  3. In a separate bowl, beat the cream cheese until smooth. Add the sugar, vanilla, eggs, and sour cream, mixing until beautifully combined.
  4. Gently stir in the flour until just combined, being careful not to overmix.
  5. Pour the cheesecake mixture over the cookie crust, spreading it evenly.
  6. Break the remaining dough into small balls and drop them on top of the cheesecake.
Baking
  1. Bake for 30-35 minutes or until the center is set but still has a gentle jiggle.
  2. Let the cheesecake cool down, then refrigerate for at least 4 hours before serving.

Notes

If short on time, using store-bought sugar cookie dough is fine. To prevent cracks, ensure a slight jiggle in the center when removing from the oven. Add lemon zest or chocolate chips for extra flavor.
