Preparation
- Preheat your oven to 350°F (175°C).
- Press 1 1/2 cups of sugar cookie dough firmly into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese until smooth. Add the sugar, vanilla, eggs, and sour cream, mixing until beautifully combined.
- Gently stir in the flour until just combined, being careful not to overmix.
- Pour the cheesecake mixture over the cookie crust, spreading it evenly.
- Break the remaining dough into small balls and drop them on top of the cheesecake.
Baking
- Bake for 30-35 minutes or until the center is set but still has a gentle jiggle.
- Let the cheesecake cool down, then refrigerate for at least 4 hours before serving.
Notes
If short on time, using store-bought sugar cookie dough is fine. To prevent cracks, ensure a slight jiggle in the center when removing from the oven. Add lemon zest or chocolate chips for extra flavor.
