Ingredients
  

For the Casserole
  • 2 pounds sweet potatoes, cleaned
  • 4 tablespoons melted butter Use unsalted butter for better salt control.
  • 1/4 cup milk
  • 1/4 cup packed brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 large egg
  • 1 teaspoon vanilla
For the Topping
  • 1/2 cup packed brown sugar For topping.
  • 1/2 cup flour
  • 4 tablespoons melted butter For topping.
  • 1/4 cup chopped pecans
  • 1 cup miniature marshmallows

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Line a sheet pan with foil and place the sweet potatoes on it. Prick the potatoes with a fork, then roast them in the oven until tender, about 45 minutes to 1 hour.
  3. Once cooled, cut open the sweet potatoes and scoop out the insides into a large bowl.
Mixing Ingredients
  1. Add the melted butter, milk, packed brown sugar, maple syrup, cinnamon, egg, and vanilla to the sweet potatoes and mash until mostly smooth.
Assembly
  1. Grease a 9-inch square pan or a 2-quart baking dish with cooking spray and spread the sweet potato mixture evenly in the pan.
Topping
  1. In a bowl, mix the brown sugar, flour, melted butter, and chopped pecans until crumbly, then sprinkle over the sweet potato mixture.
Baking
  1. Bake in the oven for 25–30 minutes or until lightly browned on top.
  2. Sprinkle the miniature marshmallows on top and return to the oven for an additional 3–5 minutes until melted.
Serving
  1. Serve immediately and enjoy!

Notes

You can microwave the sweet potatoes for a quicker option. If the mixture is too dry, add more milk. Feel free to customize by adding nutmeg or apples for extra flavor.
