Preparation
- Preheat your oven to 350°F.
- In a skillet over medium heat, crumble your ground beef and cook until it’s beautifully browned, around 5-7 minutes. Drain off any excess fat.
- Stir in your taco seasoning mix and salsa; let it simmer for about 2-3 minutes.
- In a large bowl, combine the cooked beef, black beans, and frozen corn.
Assembly
- Spread 1 cup of crushed tortilla chips in a greased 9×13 baking dish.
- Top it with the beef mixture and then sprinkle 1 cup of shredded cheddar cheese over everything.
- Add the remaining 1 cup of tortilla chips, pressing them gently into the melted cheese. Then, top it all off with the last cup of cheddar.
Baking
- Bake in the preheated oven for 20-25 minutes until hot and bubbly with golden edges.
Serving
- Once it’s out, sprinkle your sliced black olives, green onions, and cilantro (if you’re using it) on top. Let it sit for 5 minutes before serving.
Notes
Prep your ingredients ahead of time for a smoother cooking process. If your Taco Bake is too dry, add a splash more salsa or some extra cheese before baking. You can also add diced bell peppers or jalapeños for extra flair and flavor.
