  • 1 pound lean ground beef
  • 1 packet taco seasoning mix This gives it that classic taco flavor we all love.
  • 1 cup salsa Choose your favorite brand for an extra kick.
  • 1 can (15 oz) black beans, drained and rinsed Packed with protein and fiber.
  • 1 cup frozen corn kernels Sweeter than fresh corn and no prep required!
  • 2 cups crushed tortilla chips, divided For that delightful crunch.
  • 2 cups shredded cheddar cheese, divided Because you can never have too much cheese.
  • 1/2 cup sliced black olives Optional, but they add a great briny contrast.
  • 1/4 cup chopped green onions For a fresh, oniony bite.
  • 1/4 cup fresh cilantro, chopped Optional, adds a lovely brightness.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. In a skillet over medium heat, crumble your ground beef and cook until it’s beautifully browned, around 5-7 minutes. Drain off any excess fat.
  3. Stir in your taco seasoning mix and salsa; let it simmer for about 2-3 minutes.
  4. In a large bowl, combine the cooked beef, black beans, and frozen corn.
Assembly
  1. Spread 1 cup of crushed tortilla chips in a greased 9×13 baking dish.
  2. Top it with the beef mixture and then sprinkle 1 cup of shredded cheddar cheese over everything.
  3. Add the remaining 1 cup of tortilla chips, pressing them gently into the melted cheese. Then, top it all off with the last cup of cheddar.
Baking
  1. Bake in the preheated oven for 20-25 minutes until hot and bubbly with golden edges.
Serving
  1. Once it’s out, sprinkle your sliced black olives, green onions, and cilantro (if you’re using it) on top. Let it sit for 5 minutes before serving.

Notes

Prep your ingredients ahead of time for a smoother cooking process. If your Taco Bake is too dry, add a splash more salsa or some extra cheese before baking. You can also add diced bell peppers or jalapeños for extra flair and flavor.
