Preparation
  1. Preheat your oven according to the package instructions for the Tater Tots, then spread the tots in a single layer.
  2. Cook the Tater Tots in the oven until crispy and golden.
Make the Sausage Gravy
  1. In a skillet, cook the breakfast sausage over medium heat until browned and slightly caramelized.
  2. Stir in the flour and cook for 1 minute to remove the raw flavor.
  3. Gradually add the milk, stirring continuously until the mixture thickens; season with salt and pepper, to taste.
Fry the Eggs
  1. Fry the eggs to your liking, sunny-side up or over-easy.
Assemble the Bowl
  1. Place the Tater Tots in a bowl, top with sausage gravy, sprinkle cheese, add green onions, and finish with the fried eggs.

Notes
