- Wash and dice tomatoes into bite-size pieces; look for even cubes.
- Crack the buttery crackers into a bowl; you want coarse crumbs, not dust.
- Add the diced tomatoes into a large mixing bowl and sprinkle in the crushed crackers.
- Stir the mayonnaise and shredded cheddar together in a small bowl until slightly thick.
- Fold the mayo-cheese mixture into the tomatoes and crackers gently; scoop from the bottom so crackers keep some texture.
- Add the sliced green onions and season with salt and plenty of black pepper; done looks creamy with visible cracker pieces.
- Taste and adjust; serve immediately so the crackers stay pleasantly crisp.
Notes
Time-saver: Crush crackers in a zip-top bag with a rolling pin instead of by hand—fast and tidy. If you add crackers too early, they get soggy; instead, mix just before serving. Stir in a pinch of smoked paprika or chopped basil for extra warmth.
