  • 1 sleeve buttery crackers, crushed Use crackers fresh for best crunch.
  • ½ cup mayonnaise Full-fat mayo = creamier texture.
  • ½ cup shredded cheddar cheese Sharp cheddar = more savory bite.
  • 2 pieces green onions, sliced
  • Salt and black pepper, to taste

Preparation
  1. Wash and dice tomatoes into bite-size pieces; look for even cubes.
  2. Crack the buttery crackers into a bowl; you want coarse crumbs, not dust.
  3. Add the diced tomatoes into a large mixing bowl and sprinkle in the crushed crackers.
  4. Stir the mayonnaise and shredded cheddar together in a small bowl until slightly thick.
  5. Fold the mayo-cheese mixture into the tomatoes and crackers gently; scoop from the bottom so crackers keep some texture.
  6. Add the sliced green onions and season with salt and plenty of black pepper; done looks creamy with visible cracker pieces.
  7. Taste and adjust; serve immediately so the crackers stay pleasantly crisp.

Notes

Time-saver: Crush crackers in a zip-top bag with a rolling pin instead of by hand—fast and tidy. If you add crackers too early, they get soggy; instead, mix just before serving. Stir in a pinch of smoked paprika or chopped basil for extra warmth.
