  • 1 lb ground beef or stew meat
  • 1 cup onion, diced

  • 3 large potatoes, diced
  • 3 medium carrots, sliced
  • 2 cups green beans (fresh, canned, or frozen)
  • 1.5 cups corn (canned or frozen)
  • 1 cup peas
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 6 cups beef broth
Seasonings
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tbsp Worcestershire sauce (optional) Adds a subtle, savory depth.

Method
 

Preparation
  1. Heat a large pot over medium heat. Add the ground beef and brown it, breaking it up with a spoon. Drain excess grease.
  2. Add the diced onion and minced garlic. Sauté for about 3 minutes until the onion looks translucent.
  3. Stir in the diced potatoes and sliced carrots, then add the green beans, corn, peas, diced tomatoes, and tomato sauce.
  4. Pour in the beef broth and season with salt, pepper, paprika, garlic powder, onion powder, basil, and parsley. If using Worcestershire sauce, add it now.
Cooking
  1. Stir everything well, and bring the pot to a gentle boil.
  2. Reduce heat to low, cover, and simmer for 45-60 minutes.
  3. Taste and adjust seasoning; add more salt or pepper if needed.
Serving
  1. Ladle into bowls and serve warm with cornbread, crackers, or crusty bread.

Notes

Chop vegetables the night before for faster prep. If the soup is too thin, simmer uncovered to concentrate flavors. For a flavor twist, stir in smoked paprika or balsamic vinegar.
