Main Ingredients
  • 1.5 pounds ground beef Use 90/10 beef for less grease.
  • 1 cup chopped onion Fresh onion = sweeter aroma.
  • 3 ounces cream cheese Use room-temperature for faster melting.
  • 1 packet taco seasoning
  • 1 4-ounce can diced green chiles
  • 2-3 cups Fritos corn chips Choose your favorite Fritos bag size.
  • 1 cup shredded taco-blend cheese Taco blend gives melty stretch.
  • 1 Roma tomato diced
  • 1-2 cups shredded lettuce

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and set an oven-safe skillet on the stove.
  2. Heat the skillet over medium-high and add the ground beef and chopped onion; listen for a steady sizzle.
  3. Brown the beef, stirring often, until no pink remains and the onion softens; drain excess fat if the pan pools grease.
  4. Lower the heat and stir in the taco seasoning, diced green chiles, and cream cheese. Keep stirring until the cream cheese melts and the mixture is smooth and glossy.
Cooking
  1. Spread 2–3 cups of Fritos evenly over the beef mixture; the chips will add texture under the cheese.
  2. Sprinkle the shredded taco-blend cheese across the top in an even layer.
  3. Slide the skillet into the preheated oven and bake for about 20 minutes, or until the cheese bubbles and gets golden at the edges.
  4. Remove from the oven and immediately scatter shredded lettuce and diced Roma tomato on top; serve warm with salsa and sour cream if you like.

Notes

If chips go soggy, add half the chips before baking and reserve some to sprinkle on top for crunch. Stir in a spoonful of chipotle in adobo for smoky heat.
