For the topping
  • 3 tablespoons brown sugar For a sweet, crunchy topping.
  • 2 tablespoons butter, melted Helps bind the topping together.
  • 2 tablespoons chopped toasted pecans Adds crunch and flavor.

Method
 

Preparation
  1. Add the cubed sweet potatoes to your 6QT slow cooker.
  2. In a small bowl, whisk together the dark brown sugar, melted butter, vanilla extract, water, cinnamon, pumpkin pie spice, and a pinch of salt until combined.
  3. Pour the mixture over the sweet potatoes and gently stir to coat all the cubes evenly.
Cooking
  1. Cover the slow cooker with the lid and cook on high for 4 hours or low for 8 hours, or until the sweet potatoes are tender.
  2. Once cooked, mash the sweet potatoes until smooth.
Topping
  1. Prepare the topping by mixing the brown sugar, melted butter, and toasted pecans in a bowl; sprinkle it over the mashed sweet potatoes.
  2. Cover again and let it cook on low for an extra 5 minutes to get the topping nice and crisp.

Notes

Double the recipe for bigger crowds. Let the casserole rest after cooking to allow flavors to meld.
