Preparation
- Add the cubed sweet potatoes to your 6QT slow cooker.
- In a small bowl, whisk together the dark brown sugar, melted butter, vanilla extract, water, cinnamon, pumpkin pie spice, and a pinch of salt until combined.
- Pour the mixture over the sweet potatoes and gently stir to coat all the cubes evenly.
Cooking
- Cover the slow cooker with the lid and cook on high for 4 hours or low for 8 hours, or until the sweet potatoes are tender.
- Once cooked, mash the sweet potatoes until smooth.
Topping
- Prepare the topping by mixing the brown sugar, melted butter, and toasted pecans in a bowl; sprinkle it over the mashed sweet potatoes.
- Cover again and let it cook on low for an extra 5 minutes to get the topping nice and crisp.
Notes
Double the recipe for bigger crowds. Let the casserole rest after cooking to allow flavors to meld.
