- Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tbsp of the butter, letting the butter melt completely.
- Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper. Cook for approximately 4 minutes without disturbing the mixture.
- Stir everything together and continue cooking for an additional 3-4 minutes, or until the potatoes are fork-tender. Remove the potatoes from the pan and set them aside in a bowl.
- Return the skillet to the stove and increase the heat to high. Add the remaining 2 tbsp of butter and stir to melt.
- Add the steak bites in a single layer. Cook for 1 minute before flipping or stirring the steak for another 1-2 minutes, or until it reaches your desired doneness.
- Remove the skillet from the heat, toss the cooked potatoes back into the skillet with the steak, and mix everything together. Add additional salt and pepper if desired.
- Serve hot, topped with fresh chopped parsley if you like, and enjoy!
Notes
For best results, choose a well-marbled cut of steak and avoid crowding the pan during cooking. Allow the steak to rest after cooking for enhanced juiciness. Mix herbs for added flavor and adjust seasoning as per taste.
