Ingredients
  

Wet Ingredients
  • 4 bananas 4 bananas, about 1 1/3 cups, mashed Choose overripe bananas for natural sweetness.
  • 1 large egg 1 large egg
  • 1 Tablespoon 1 Tablespoon vanilla extract
  • 3 Tablespoons 3 Tablespoons light brown sugar Can adjust based on sweetness preference.
  • 2 Tablespoons 2 Tablespoons granulated sugar Can adjust based on sweetness preference.
Dry Ingredients
  • 1 teaspoon 1 teaspoon ground cinnamon
  • 1 teaspoon 1 teaspoon baking powder
  • 1 teaspoon 1 teaspoon baking soda
  • 1/2 teaspoon 1/2 teaspoon salt
  • 1 1/2 cups 1 1/2 cups all-purpose flour (white or white-whole wheat) Can substitute with whole wheat flour.
Additional Ingredients
  • 2 Tablespoons 2 Tablespoons unsalted butter, melted Can substitute with applesauce to reduce fat.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F and grease a standard 9x5 inch loaf pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the egg, vanilla extract, brown sugar, granulated sugar, and cinnamon to the bananas, stirring well to combine.
  4. In a separate small bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture and stir until just combined.
  6. Gently fold in the melted butter until mixed in.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the banana bread to cool in the pan for 5-10 minutes before inverting onto a wire cooling rack.
Muffin Variation
  1. If you prefer muffins, divide the batter evenly into a greased or lined standard 12-cup muffin tin and bake for 18-25 minutes.

Notes

Pairs well with Greek yogurt, fresh fruit salad, nut butter, or cream cheese. For best results, allow the bread to cool completely before slicing. Extra tips: use overripe bananas for more sweetness, don’t overmix, and try adding extras like walnuts or chocolate chips.
