Blackberry Filling
  • 2.5 cups blackberries, washed Fresh is best for bright flavor.
  • 1 cup sugar Helps the berries macerate and sweeten the juices.
Cobbler Batter
  • 1 cup flour Plain all-purpose works perfectly.
  • 2 teaspoons baking powder Gives the batter a tender lift.
  • 0.5 teaspoon salt Balances the sweetness.
  • 1 cup milk Whole milk makes it richer, but 2% is fine too.
  • 0.5 cup unsalted butter, melted Use unsalted butter to control the salt.

Method
 

Preparation
  1. In a large bowl, mix the blackberries and sugar. Let them sit for 25-30 minutes to macerate.
  2. Preheat the oven to 375°F.
  3. In another bowl, stir together flour, baking powder, and salt. Add the milk and stir until mostly smooth, with a few small lumps remaining.
  4. Add the melted unsalted butter and mix by hand until the batter comes together.
  5. Pour the batter into a medium baking dish without greasing it and smooth the top with a spatula.
  6. Pour the macerated berries and all their juices evenly over the batter.
Baking
  1. Bake for 45-60 minutes, until the edges are golden and the center is bubbling with syrup.
Serving
  1. Cool for 5 minutes, then scoop into bowls and serve warm with vanilla ice cream.

Notes

Macerate the berries the night before for a time-saver. If the filling seems too thin, dust with cornstarch before pouring over the batter. For a flavor twist, add lemon zest when macerating and consider adding chopped nuts to the batter.
