  • 2 lbs ground beef (80/20 recommended) Using 80/20 ground beef gives your meatloaf that juicy, flavorful kick without being overly greasy.
  • 1 cup breadcrumbs Breadcrumbs help keep the loaf together and bring in a lovely texture.
  • 2 large eggs
  • 1 cup ketchup (divided) Used for mixing and topping.
  • 1 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Prepare a large sheet pan by lining it with parchment paper or foil.
  3. In a large bowl, combine the ground beef, breadcrumbs, eggs, 1/2 cup of ketchup, and salt. Mix gently until just combined.
  4. Transfer the meat mixture onto the prepared sheet pan and shape it into a loaf, about 2-3 inches thick.
  5. Spread the remaining 1/2 cup of ketchup evenly over the top of the meatloaf.
Cooking
  1. Bake uncovered for 40-45 minutes, or until the internal temperature reaches 160 degrees F (71 degrees C).
  2. Let it rest for 5-10 minutes before slicing to allow juices to redistribute.

Notes

Tips for perfect meatloaf include chilling the mixture before baking and adding more ketchup or milk if it becomes too crumbly. Adding diced bell peppers or onions can also enhance the flavor.
