Ingredients
  

Cookie Base
  • 1.5 cups all-purpose flour Sifted
  • 0.5 cups unsalted butter, room temperature
  • 1 cup peanut butter Creamy or crunchy
  • 0.5 cups brown sugar, lightly packed
  • 0.5 cups granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 0.75 tsp baking powder
  • pinch sea salt Optional for flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, sift together the all-purpose flour and baking powder, then whisk them until well combined.
  3. In your stand mixer fitted with a paddle attachment, cream together the room temperature unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the peanut butter to the mixture and blend until fully incorporated.
  5. Beat in the egg and vanilla extract until well combined.
  6. Gradually add the flour mixture to the peanut butter mix, beating until just incorporated and a dough forms.
Baking
  1. Roll the dough into one-inch balls and place them on a baking sheet lined with parchment paper.
  2. Using a fork, flatten each cookie in a criss-cross pattern.
  3. Bake the cookies for about 10 minutes until the edges are lightly golden.
  4. Allow them to cool completely on the baking sheet before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for at least 30 minutes before baking. A sprinkle of sea salt on top before baking enhances flavor. Consider adding chocolate chips or nuts for variation.
